I made this tonight for the first time, and WOW it was good. Here's how I made it:
First, clean the squid and cut it up. I used a whole box of frozen squid, thawed, so there was a lot. Adjust the other measurements accordingly if you use less. Here's where I learned to clean the squid:
How to Clean a Squid
Saute the squid in good quality olive oil on high heat until it firms up (turns to circles, and the tentacles spread out).
Add 5 cloves of diced garlic and saute for a little while longer.
Pour in 1/2 cup of white wine (red will do, too).
Pour in 1 can of diced tomatoes.
Add salt, pepper, and a few dashes of cayenne for some kick.
Cover and simmer on very low heat until the squid is tender. It was about 15 minutes for me.
