I've been craving cornbread lately. I have a box of Alber's corn meal in the cupboard so for the past couple nights I've been making it in a cast iron skillet. I'm following the recipe on the box which uses very little sugar. The other thing I'm doing is what a cousin from North Carolina told me: while the oven is heating up, put butter or bacon drippings in the pan and get it good and hot. Swirl the fat around the pan to make sure the sides are covered then pour the excess into the batter and mix. Pour batter into skillet and bake. After about 20 minutes, the cornbread comes out very fluffy, tender and savory. I tried spreading butter on the bread but found it tastes better plain -- without anything on it. It has satisfied my cravings.

So, how do you all do cornbread?
 
my room mate made a simple cornbread this past thanksgiving similar to the one alayman described
.. (she really wanted cornbread)... ..she added sugar and it was a little too sweet for my taste....
but it was still good...


the last time i made cornbread myself it was a savory navajo mexican style with peppers and cheese,
using a recipe similar to the one below.... we use to have fried okra on the same nights we made this
... along with pork chops or steak....😋

but unfortunately diabetes and high cholesterol issues in other family members caused me to alter

both my cooking and eating habits - both to help them, and also because i realized it wouldn;t do
me any harm either....... :sneaky:

but back when we weren;t too concerned about all that..
...we made cornbread this way...


mexican-navajo cornbread....

ingredients......
  • 1 1/2 cups shredded sharp cheddar cheese
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 2 eggs, slightly beaten
  • 1 can (8.5 oz) cream-style corn
  • 1 can (4.5 oz) chopped green chiles -
  • ... - you can also use/add fresh chopped red chilis
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

procedure...

- heat oven to 375°F. ..... lightly coat inside of cake pan with either cooking spray or oil..
- in large bowl, mix cheese, buttermilk, oil, eggs, corn and chiles; ...blend well...
- in small bowl, mix cornmeal, flour, baking powder, baking soda and salt. ...add to cheese
mixture;..... stir just until dry ingredients are moistened. .... pour into cake pan...
- bake 40 to 50 minutes or until cornbread is deep golden brown and a toothpick test in center
comes out clean.
- cool 10 minutes before removing from pan.. ...but we usually leave it in there and cut out
the piece we want...

I've made all kinds of cornbread! I love it. Growing up in Illinois, and working in the corn fields during the summers, I grew to love corn products. I'm not really "in love" with the sweeter cornbread, though that's what I grew up with. I like it when it's more savory! I make ALL of mine from scratch!
 
I make cornbread with soups. I use Martha White out of the bag just had water. I use a egg with alittle milk.

I guess technically one could call that stuff out-of-the-box cornbread! LOL Oh, the credit we give partially prefabbed foots these days! ;)

I love cornbread with about everything! Having been raised in Illinois, I would expect a LOT of people to like cornbread! Dad used to eat cornbread and buttermilk for breakfast or dessert! Either way, he loved it.
 
Have you ever had corn bread stuffing.

How about cornbread "IN" your milk.

How about cornbread made in corn shaped sticks that's70% crust and 30% bread.

Yep. We have had it several times over the past few weeks at a small buffet in Shelbyville, Tennessee called "The Dining Table". Great place to eat!
