I'm not a big fan of SPAM, although if you fry it right, it can be pretty good.
Taylor Pork Roll (from New Jersey) tastes similar but far superior to SPAM, but it is solid and densely packed in canvas. There's no gelatin. You slice it thin, fry it up, and it's heavenly. It's made from pork shoulder and bacon, fermented, and (like I said) compressed into a dense roll wrapped in canvas (covered by a plastic wrapper).
There is a variant called Taylor Ham, which is just the same thing with fewer flavorings added so it's for people who prefer something more bland. I prefer the original, real thing - Taylor Pork Roll. There are a few competitors in New Jersey, but Taylor is best.
