In fact "eunuch" is a transliteration of the corresponding Greek term eunouchos, which has the same semantic range as its English cognate: an emasculated man. (And, metaphorically as Jesus also uses it, a man who voluntarily forgoes sexual relations or marriage.) Its definition doesn't include homosexual men.
It doesn't include men who engage in homosexual practices. It could very well include men who are attracted to other men and choose not to pursue those types of relationships.
