Wine or Grape Juice, Leavened or Unleavened Bread?

Which does your church use? 

The combination that struck me as most odd was the Greek Orthodox church when I was growing up.  They used real wine and leavened bread. 
 
good red wine & home baked organic unleavened bread

Is it holier that way? I don't think so, but it's a closer match to the original, and it tastes better.
 
Red wine or juice, depending on preference. Loaves of unleaven bread broken into pieces.

It is interesting to learn why various Christian traditions practice certain ways, especially when they are intentional about it. (e.g. Orthodox use of leavened bread)

I don't know when/how they decided to use leavened bread.  I have to admit the bread at our church was really delicious.  I often wanted to get back in line and get another piece.

Unleavened bread was the bread of sorrow and affliction in Scripture. The Lord's table shouldn't be a place of sorrow and affliction, ergo unleavened bread doesn't have a place at it. :)

I don't know if it matters to God.  But the symbolism favors wine and unleavened bread.
